A new chilli paste to add to your hot sauce collection

Georgians use a variety of garlic-chilli-spice pastes in everyday cooking – here’s one that lasts well in the fridge

Makes: 1 small pot


8 garlic cloves
2 tsp coarse sea salt
4 tsp dried chilli flakes
4 tsp ground coriander
2 tsp ground marigold
4 tsp ground blue fenugreek
2 tsp garlic powder


Crush the garlic with the back of a knife and then put in a mortar with a pinch of the sea salt. Grind with a pestle to a smooth paste and set aside.

Put the rest of the ingredients in a clean mortar and grind together with a pestle until fine and well combined. Add the garlic along with ½ tablespoon of water and mix to combine. This will keep in the fridge for up to 1 month.
