Barbecued fruit chaat
2 tbsp vegetable oil
½ cup balsamic vinegar
5 tbsp pomegranate powder
6 tsp sweet tamarind chutney
3 tsp roasted cumin powder
2 tsp chaat masala
2 tsp Kashmiri chilli powder
1 tsp garam masala powder
1 tsp black salt
1 tsp peppercorns, crushed
2 medium sweet potatoes, boiled, peeled and cut into large cubes
1 star fruit, cut into thick slices
100g pineapple cubes
1 each red, yellow and green bell peppers, cut into large cubes
½ Granny Smith apple, cut into cubes
½ guava, cut into cubes
In a large bowl, mix together oil, vinegar, pomegranate powder, tamarind chutney, cumin powder, chaat masala, chilli powders, garam masala powder, black salt and peppercorns.
Add the remaining ingredients, mix well and let it marinate for 30 mins.
Now thread the vegetables and grill them over a hot barbecue or a grill until charred at the edges.
Serve with a dip of your choice.
