  • 800g beef cubes

    4 tbsp cooking oil

    1 can (400g) coconut milk

    1 tbsp soy sauce

    6 lime leaves

    2 tbsp brown sugar

    1 tsp salt

    1 tbsp lime juice

    Curry paste

    3 shallots, peeled and chopped

    3 garlic cloves, peeled and chopped

    3 long red chillis, chopped

    2-inch piece of fresh ginger, peeled and grated

    1 tbsp lemongrass paste

    2 tbsp cooking oil

    1 tsp turmeric

    ½ tsp black pepper

    To serve

    Lime wedges, fresh coriander and cooked jasmine rice


  • Prepare the curry paste: Combine all ingredients in a food processor and blend to make a smooth paste.

    Heat oil in a pan over high heat, and fry the cubed meat until nicely browned. Set aside.

    Heat a medium pot over medium-high heat, and cook the curry paste, stirring, for 4-5 minutes.

    Add the browned meat, coconut milk, soy sauce, lime leaves, sugar and salt. Bring to a simmer, cover, and cook over low heat until the beef is cooked, 2 hours. Remove from heat and add lime juice. Serve over jasmine rice, with lime wedges and fresh coriander.
