Beef sausage and bean stew

  • 2 tbsp oil

    675g beef sausages

    800g canned four-bean mix, drained and rinsed

    30g packet taco seasoning

    410g canned diced tomatoes

    120g thickly sliced roasted red bell peppers

    160g fresh or frozen corn kernels

    80ml water

    Coriander, for garnishing

    Grilled tortillas and sour cream, to serve


  • Heat oil in a large frying pan and cook beef sausages until slightly coloured.

    Remove and keep aside.

    Add beans, taco seasoning, diced tomatoes, bell peppers, corn kernels and water.

    Bring to the boil.

    Reduce heat and simmer, uncovered, for 5 mins or until the sauce thickens.

    Meanwhile, cut sausages into thick slices; return to pan and simmer, uncovered, until heated through.

    Season to taste.

    Garnish with coriander.

    Serve with tortillas and sour cream.
