Braised borlotti beans with tomato and garlic

  • 500g fresh borlotti beans, shelled

    80ml olive oil

    250ml water

    1 bulb garlic, cut in half horizontally

    450g ripe tomatoes, coarsely chopped

    4 tbsp fresh oregano leaves

    ½ cup coarsely chopped fresh basil


  • Preheat oven to 180°C.

    Place beans in a medium-size baking dish; drizzle with oil and water.

    Add garlic, tomato and oregano; bake, covered, about 1 hour 15 mins, or until beans are tender.

    Stir in basil.

    Serve warm.
