Brazilian beach prawn skewers
Get your barbecue party started with style. These elegant prawn skewers, espetinhos de camarão, are some of the hottest things you can find on a Brazilian beach.
12 large prawns, cleaned
40g salted butter, softened
1 tbsp olive oil
2 garlic cloves, minced
2 spring onions, finely sliced
1 tsp chilli flakes
½ tsp salt
Lime wedges, to serve
Fresh coriander, to serve
You will also need 4 wooden skewers, soaked for an hour
Thread the cleaned, deveined prawns onto skewers.
In a small bowl, combine soft butter and olive oil. Add garlic and spring onion. Season with chilli flakes and salt.
Preheat the grill.
Place the skewers directly over hot side of grill and cook for 2–3 mins, then turn and cook the other side for 2–3 mins.
Transfer to a serving plate, and spoon the butter mixture generously on top.
Serve immediately with lime wedges and fresh coriander.
