Cheesy sausage quesaditas

  • 1 tbsp olive oil

    1 small red onion, chopped finely

    2 beef sausages, finely chopped

    1 tsp smoked paprika

    80g chopped drained roasted red capsicum

    2 wholemeal pita pockets

    100g grated four cheese mix

    30g baby spinach leaves


  • Heat oil in a medium frying pan over medium-high heat; cook onion, stirring, for 3 mins or until softened. Add sausages; cook for 2 mins or until golden. Add paprika; cook for 30 seconds. Stir in capsicum; season to taste.

    Warm the pita pockets in microwave to refresh. Split pita pockets open. Fill each with a quarter of the cheese, half the sausage mixture and half the spinach, then top with remaining cheese.

    Preheat a sandwich press; toast quesaditas in hot sandwich press for 4 mins or until golden and crisp.
