Chicken salad

  • 250ml yogurt

    1 small cucumber, roughly grated

    2 garlic cloves, chopped

    30g mint leaves, chopped

    Juice and rind of 1 lemon

    Salt and freshly ground black pepper, to taste

    45ml olive oil

    6 slices of bread, cut into cubes

    2 heads of cos lettuce

    1 large roasted chicken, deboned and shredded

    6 eggs, boiled, peeled and halved


  • Mix together yogurt and cucumber. Add garlic, mint, lemon juice and rind. Mix well. Season with salt and pepper. Set aside.

    In a frying pan, heat olive oil then add bread cubes and fry until golden brown. Set aside.

    To serve, place lettuce leaves on a platter.

    Sprinkle chicken, eggs and bread cubes over then drizzle with the yogurt mixture.

    Season and serve.
