Chicken, spinach and ricotta bake

  • 1 tbsp olive oil

    200g brown onion, finely chopped

    2 cloves garlic, crushed

    10 instant lasagne sheets

    240g shredded barbecued chicken meat

    100g coarsely grated pizza cheese

    750ml bottled tomato pasta sauce

    500ml water

    50g baby spinach leaves

    120g firm ricotta cheese, crumbled


  • Heat oil in a shallow flameproof dish; cook onion and garlic; stirring until onion softens.

    Break lasagne sheets into bite-size pieces.

    Sprinkle pasta pieces, chicken and half the pizza cheese into the dish.

    Pour combined pasta sauce and the water over and simmer, covered, for about 20 mins or until pasta is tender.

    Meanwhile preheat grill or broiler.

    Take the dish off the heat and sprinkle spinach, ricotta and remaining pizza cheese over.

    Place under the grill for 5 mins or until the cheese melts.

    Stand, covered, for 10 mins before serving.
