Chinese rice noodles
2 small tomatoes, peeled and sliced
A bunch of scallions, chopped, reserve some of the greens for garnishing
250g minced meat
15g chicken powder
Salt and pepper, to taste
1 packet rice noodles
Oil, as required
2 cups water
In a dish, add tomatoes, scallions, minced meat, half the chicken powder and salt to taste.
Stir well to let the meat marinate in the ingredients.
Heat oil in pan and stir-fry minced meat until fragrant.
Add tomatoes and stir well.
Allow to cook until done.
In a separate pan, boil two cups of water.
Once water is boiling, add rice noodles and cook until they float.
Add salt, remaining chicken powder and pepper.
Turn off the heat and mix in a little fragrant oil.
Spoon meat mixture over.
Sprinkle reserved scallion greens on top.
Serve with blanched greens (optional).
