Date granola

  • 1½ cup oat flakes

    ½ cup pumpkin seeds

    ½ cup sunflower seeds

    ¾ cup pecan nuts

    2½ tbsp date syrup

    ¼ cup virgin coconut oil

    ¼ cup coconut sugar or dark sugar

    ¾ tsp salt

    12 dates, pitted and chopped

    2 tsp cinnamon

    1½ tsp cardamom


  • Place oat flakes, pumpkin seeds, sunflower seeds, pecans, date syrup, coconut oil, sugar, and salt in a large bowl. Mix to combine. Preheat the oven to 150°C. Spread the granola mixture on an oven tin lined with baking paper.

    Bake for 35-40 mins, stirring every 10 minutes, until the granola is toasted.

    Transfer the toasted granola to a large bowl. Add chopped dates, cinnamon and cardamom. Mix well, and let it cool completely.

    Serve with yogurt, fresh berries or fruit, and honey.

    Tip: Date granola keeps in an airtight container for up to 1 month. Prepare a big batch, and enjoy for suhour as a quick, nutritious breakfast.
