Double ka meetha
1 litre milk
200g khoya (solidified milk)
1g saffron, roasted and crushed
2g nutmeg powder
5g cardamom powder
350g bread, crust removed and halved
Sugar syrup, as required (optional)
Slivers of pistachio, to ganish
Bring milk to the boil and simmer until reduced to half the quantity. Add khoya and stir until the mixture achieves a cream-like consistency. Then add saffron, nutmeg and cardamom powders. Keep aside.
Now heat ghee in a frying pan and fry the bread slices until golden brown.
Place the fried pieces of bread in an oven-proof dish and pour the thickened milk over. Let it soak for 15 mins. Meanwhile, preheat the oven to 180°C.
Drizzle sugar syrup over the soaked bread and garnish with raisins.
Bake until the crust gets golden brown. Remove and garnish with pistachio. Serve warm.
