Giant macadamia, white chocolate and cranberry cookies

  • 185g unsalted butter

    105g unsalted macadamias, coarsely chopped

    220g firmly packed light brown sugar

    110g caster sugar

    225g self-raising flour

    75g plain flour

    1 egg

    1 egg yolk

    150g white eating chocolate, coarsely chopped

    100g dried cranberries


  • Preheat oven to 180°C.

    Line three oven trays with baking paper.

    Melt butter and allow to cool.

    In a large frying pan, dry-fry nuts, stirring until browned lightly.

    Remove from heat.

    Sift sugars and flours into a large bowl and add nuts.

    Lightly beat egg, egg yolk and butter with fork in a small bowl until combined, then stir into flour mixture until mixture forms a soft dough.

    Stir in chocolate and cranberries.

    Roll rounded tablespoons of mixture into balls.

    Place balls, about 8cm apart, on trays.

    Flatten to about 8cm wide.

    Bake for about 12 mins and cool on trays.
