Granola with plums

Ingredients

  • 40g gluten-free cornflakes

    118g rice-bran cereal

    20g puffed rice

    65g pumpkin and sunflower seed kernel mix

    4 tbsp honey

    1 tbsp vegetable oil

    ½ tsp ground cinnamon

    95g thickly sliced dried figs

    55g sultanas

    700g vanilla yogurt

    8 canned plums in natural syrup, halved


Method

  • Preheat oven to 150°C. Line an oven tray with baking paper. Combine cornflakes, rice-bran cereal, puffed rice and seed mix in a large bowl.

    Drizzle with honey and oil; sprinkle with cinnamon. Toss gently to combine. Spread evenly on oven tray.

    Bake, stirring occasionally, for 20 minutes or until lightly golden.

    Stir through figs and sultanas; cool granola.

    Divide into serving bowls. Top with yogurt and plums.
