Grilled feta with banana chillies
2 cloves garlic, unpeeled
2 fresh yellow banana chillies
55g mixed olives
2 tsp lemon rind strips
4 sprigs fresh oregano
2 tbsp extra virgin olive oil
Press garlic firmly with the flat side of a knife blade until flattened; leave skin on.
Cook garlic and chillies on a heated oiled grill plate or grill or barbecue over medium heat for 3 mins each side or until charred lightly.
Remove from heat.
Cut the chillies in half lengthways.
Cut a 30cm square of foil and baking paper.
Place foil on a counter and top with paper.
Pat feta dry with paper towel; place feta in the centre of the paper.
Place grilled chilli on feta; top with olives, rind, oregano and garlic.
Season with pepper and drizzle with oil.
Bring the sides of the paper together and fold down to seal; twist the ends.
Cook parcel on grill plate for 5 mins each side or until hot and softened.
Place parcel on a plate and open carefully.
Tip: Halloumi is a good substitute for feta.
