Honey walnut biscuits
250ml vegetable oil
110g caster sugar
125ml orange juice
2 tbsp apple juice
600g self-raising flour
1 tsp ground cinnamon
100g walnut pieces, finely chopped
220g caster sugar
2 tbsp lemon juice
1 cinnamon stick
Preheat oven to 160°C.
Grease oven trays; line with baking paper.
Combine oil, sugar, juice, apple juice and egg in a large bowl.
Stir in sifted flour, semolina and half the cinnamon.
Roll level tablespoons of mixture into 6cm oval shapes.
Place on trays, about 4cm apart.
Bake biscuits for about 25 mins.
Cool on trays.
Meanwhile, make spiced syrup: Stir ingredients in a small saucepan over heat until sugar dissolves; bring to the boil.
Reduce heat; simmer, uncovered, about 7 mins or until thickened slightly.
Strain into heatproof bowl.
Dip biscuits, in batches, into hot syrup for about 30 seconds or until well coated; transfer to wire rack.
Sprinkle biscuits with combined walnuts and remaining cinnamon.
