  • 11/2kg boneless lamb shoulder, chopped coarsely

    400g onions, thinly sliced

    5cm piece fresh ginger, grated

    3 cloves garlic, crushed

    150g rogan josh paste

    2 tbsp tomato paste

    400g canned diced tomatoes

    125ml beef stock

    1 cinnamon stick

    4 cardamom pods, bruised

    2 dried bay leaves

    ½ cup loosely packed fresh


  • Combine lamb, onion, ginger, garlic, pastes, tomatoes, stock, cinnamon, cardamom and bay leaves in a 4.5-litre (18-cup) slow cooker.

    Cook, covered, on low, about 8 hours.

    Season to taste.

    Serve curry topped with coriander.
