Mango macadamia slice

  • 1 cup plain flour, sifted

    ¾ cup macadamia nuts

    ½ cup self-raising flour, sifted

    90g butter, chopped

    ½ cup caster sugar

    1 egg

    300g sour cream

    1 tbsp brown sugar

    2 mangoes, seed removed, thinly sliced

    Flaked coconut, to serve

    Whipped cream, to serve


  • Preheat oven to moderate, 180°C. Line a 18 x 28cm slice pan with baking paper. Place plain flour, macadamias, self-raising flour, butter, sugar and egg in a food processor.

    Pulse until a dough forms. Using floured fingertips, press dough into pan. Bake for 15-20 mins until golden.

    Cool for 10 mins. In a bowl, mix sour cream and sugar together. Spread evenly over base. Arrange mango slices in a single layer over cream.

    Bake for 15-20 mins, until topping is firm. Cool completely in pan. Cut into rectangles.

    Serve sprinkled with flaked coconut and accompany with cream. Store in an airtight container.
