Miso roasted whole cauliflower

  • 1.3kg whole cauliflower

    250ml orange or pineapple juice

    65g white miso paste

    4 tbsp maple syrup

    2 tbsp olive oil

    1 tbsp finely grated ginger

    2 cloves garlic, crushed

    2 tsp sesame seeds

    1 spring onion, thinly sliced


  • Preheat the oven to 200°C.

    Cut a cross at the base of the cauliflower and place it in a large, heavy, based iron casserole or deep oven-proof dish. Pour juice into the base of the dish.

    Combine miso, maple syrup, oil, ginger and garlic in a bowl, season. Spread the mixture over the cauliflower. Cover the dish with a lid or a foil and bake for 20 mins. Sprinkle sesame seeds and bake, uncovered for 15 mins or until cauliflower is tender and lightly brown.

    Garnish with spring onion and serve.
