No-bake chocolate halva cookies
135g rolled oats
230g fresh dates, pitted
80ml pure maple syrup
1 tsp vanilla extract
½ tsp ground cinnamon
25g cacao powder
50g white sesame seeds, toasted
65g finely chopped pistachios
Process oats, dates tahini, syrup, vanilla, cinnamon and cacao until well combined.
Divide mixture in half; using damp hands roll each half into a 16cm (6 ½-inch) log.
Roll one log in sesame seeds and the other in pistachios.
Wrap logs in plastic wrap; twist ends tightly to seal.
Refrigerate logs for 1 hour or until firm.
Cut logs into 1 cm (1/2-inch) slices to serve.
