200g fresh coriander, finely chopped
30g finely chopped basil
3 green chillies, finely chopped
30g cashewnuts, roasted and broken into small pieces
½ tsp roasted cumin powder
Cheese cubes, cut into small pieces
Ghee, for shallow frying
Mince together coriander, basil and green chillies.
Mix with cashewnuts and season with salt and cumin powder.
Divide the mixture into lime-size portions.
Stuff each portion with a piece of cheese, enclosing it carefully to make a patty.
Heat ghee in a frying pan and shallow-fry patties until golden brown on both sides.
Serve hot with onion rings and chutney of your choice.
