Picnic chicken drumsticks

  • 3½ cups cornflakes

    2 tsp paprika

    1 tsp freshly ground black pepper

    1 tsp salt

    1 tsp garlic flakes

    1 tsp finely grated lemon rind

    8-10 chicken drumsticks

    ½ cup cake flour

    180ml buttermilk

    Olive oil, as required


  • Preheat the oven to 200ºC and line a large baking tray with baking paper or greased foil. Coarsely crush the cornflakes either in a food processor, or with your hands. Add paprika, pepper, salt, garlic flakes and lemon rind. Mix well.

    Dust the drumsticks with flour, dip them one at a time in the buttermilk, then roll in the crumbed mixture until covered.

    Drizzle a few drops of olive oil over each drumstick and bake for 45 minutes, or until cooked through, golden brown and crispy. Serve hot.
