Potato fritters with beef sausage
2 tsp vegetable oil
200g beef sausage, finely chopped
80g onion, finely chopped
2 fresh small red Thai chillies, finely chopped
240g medium courgette, coarsely grated
450g waxy potatoes, peeled and coarsely grated
250g small orange sweet potato, peeled and coarsely grated
3 eggs, lightly beaten
150g plain flour
1 tsp sweet paprika
Vegetable oil, for deep-frying
Heat oil in a medium frying pan; cook sausage, onion and chilli, stirring, until onion softens.
Add courgette; cook, stirring, for a minute.
Cool for 10 mins.
Combine sausage mixture in large bowl with potato, sweet potato, eggs, flour and paprika.
Heat oil in a large saucepan; deep-fry level tablespoons of the mixture, in batches, until fritters are browned lightly.
Drain on absorbent paper.
Serve with sweet chilli dipping sauce.
