Prawn club sandwiches with baked chips

  • 800g frozen potato chips

    2 tsp olive oil

    4 beef bacon rashers, each cut into three even pieces

    150g whole-egg mayonnaise

    2 tsp tomato ketchup

    A few drops of Tabasco

    8 slices white sourdough bread

    1 small green oak leaf lettuce, leaves separated

    300g tomatoes, sliced thinly

    500g shelled cooked tiger prawns


  • Preheat oven to 220°C. Place chips on a baking-paper-lined oven tray, season; cook in oven, according to packet directions.

    Meanwhile, heat oil in a large frying pan over high heat; cook beef bacon for 5 mins or until crisp. Drain on paper towel.

    Combine mayonnaise, ketchup and tabasco to taste in a small bowl. Spread bread with mayonnaise mixture.

    Sandwich lettuce, beef bacon, tomato and prawns between bread slices.

    Serve with chips.
