Prune and apple strudel

  • 200g butter, melted

    500g green apples, peeled and sliced

    500g prunes, pitted

    110g firmly packed brown sugar

    310ml water

    1 ½ tsp almond extract

    12 sheets filo pastry

    60g almond meal

    Cream or ice-cream, to serve


  • Place half the butter in a heavy-based saucepan over medium heat. Add apples, prunes, sugar, water and almond extract.

    Reduce heat and simmer, uncovered and stir occasionally, until thick and shiny, about 1 hour. Preheat oven to 200°C.

    Take two sheets of filo and brush top sheet with a little remaining butter then sprinkle with 1 tbsp almond meal.

    Repeat until all the filo is used, stacking as you go. Place apple filling in centre and roll into a log, tucking in edges to seal.

    Place strudel on a baking sheet, seam-side down, and brush all over with remaining butter.

    Bake for 30 mins or until golden and pastry is crisp.

    Serve with cream or ice-cream.
