Rocket, avocado and beef bacon burger
250g beef bacon
400g beef mince
1 small onion, finely chopped
1 egg, lightly beaten
3 tbsp chopped flat-leaf parsley
1 garlic clove, finely chopped
50g blue cheese, cubed
4 tsp butter
2 tsp olive oil
4 sesame bread rolls, sliced
Rocket and sliced avocado, to build the burger
Preheat the oven to 200°C.
Bake the beef bacon until crispy, about 10 minutes. Place on a paper towel to drain any oil. Place the beef mince in a bowl and season with salt and black pepper, to taste. Add onion, egg, parsley, garlic and blue cheese, and mix well.
Make four patties of the mixture and chill for 20 minutes. Heat butter and olive oil in a pan and gently fry the patties for about five minutes on each side. Place on paper towels to drain.
Place one half of each of the sliced bread rolls on a work surface, then arrange the rocket, avocado, beef bacon and a patty. Top with more rocket and finish with the other half of bread.
