Spaghetti cake with turkey and mozzarella
100g mozzarella cheese, grated
Basil leaves and parsley, a handful, finely chopped
4 garlic cloves, finely chopped
400g cooked spaghetti
70g smoked turkey bacon, ripped into strips
Olive oil, as required
Basil leaves, to garnish
Preheat oven to 200°C.
Beat cream, eggs, mozzarella, basil, parsley and half of the finely chopped garlic cloves together. Season with salt and pepper. Add the cooked spaghetti and turkey bacon and mix well.
Melt butter in a pan of about 20cm deep that is ovenproof. Fry the remaining half of the chopped garlic lightly and remove from the heat.
Place the pan on a baking sheet and add the spaghetti mixture to the fried garlic. Stir.
Place the pan in the oven and bake for 30 minutes, or until set and brown in colour. Drizzle some olive oil over and let it stand for a few minutes before unmoulding on to a serving dish.
Sprinkle with fresh basil leaves and serve with a green salad.
