Tuna wraps

  • 4 wholewheat wraps

    80ml mayonnaise

    2 celery sticks, julienned

    2 carrots, peeled and julienned

    1 red bellpepper, seeded and cut into thin strips

    1 tin tuna, drained and flaked


    60ml olive oil

    1 chilli, seeded and finely chopped

    1-1/2 tbsp parsley, finely chopped


  • Toast the wraps under a hot grill or in a frying pan. While the wraps are warm, spread liberally with mayonnaise. Top with celery, carrots, peppers and tuna. Combine the dressing ingredients and drizzle on top. Roll up and serve. Add wedges of crunchy fruit such as pear or apple for a hint of sweetness.
