Turkey ham and green onion fritters

  • 250g red grape tomatoes

    1 tsp balsamic vinegar

    1½ tbsp olive oil

    135g gluten free self-raising flour

    ¾ cup milk

    250g gluten-free turkey ham, finely chopped

    4 green onions, thinly sliced, plus extra, to serve

    1 large avocado, chopped

    Lemon wedges, to serve


  • Preheat oven to 200°C.

    Place tomatoes on an oven tray, drizzle with vinegar and 1 tsp of the oil. Season with salt and pepper. Roast for 15 minutes or until tomatoes just soften.

    Sift flour into a large bowl. Gradually add milk, in batches, stirring after each addition. Add turkey ham and green onion; stir to combine. Season. with salt and pepper.

    Add remaining oil in a large non-stick frying pan over medium heat. Spoon a ladleful of the batter into the pan; (if your pan is large, make a few fritters at the same time, side by side) and cook for 2 ½ minutes each side or until golden brown and cooked through. Repeat until you have used up all the batter.

    Mix together the roasted tomatoes and avocado, stir gently.

    Serve fritters with avocado and tomatoes.
