Versatile breakfast strata

  • 2 cups chunks of any kind of bread

    3 eggs

    250ml milk

    2 tsp mustard powder

    1 tsp paprika

    ½t ground nutmeg, as desired

    A pinch of chilli flakes

    Salt and freshly ground pepper

    1½ cup grated mozzarella, cheddar or blue cheese

    Oil, as required

    3 spring onions, chopped

    1 red pepper, diced

    125g mushrooms, sliced

    125ml (½ cup) chopped beef bacon

    A big handful of chopped fresh parsley or coriander

    Roasted baby tomatoes or braised tomato sauce, to serve


  • Preheat the oven to 180°C.

    Arrange the bread on a baking sheet and bake for about 10 mins until slightly dried out.

    Transfer to a greased ovenproof dish.

    Whisk eggs, milk, mustard, spices, salt and pepper.

    Add half the cheese and pour over the bread.

    Heat oil and fry onions, red pepper and mushrooms until softened.

    Add beef bacon and stir-fry a little.

    Allow to cool.

    Spoon into the dish and sprinkle parsley or coriander and remaining cheese over.

    Cover and allow to stand for at least an hour or overnight.

    Bake for 30-40 mins or until done and puffed up.

    Remove from the oven and allow to stand for 10 mins.

    Serve with the roasted tomatoes or tomato sauce.
