Watermelon and lychee salad

  • 11/2 kg watermelon, pitted and cut into small pieces

    16 lychees, peeled and seeds removed

    150g rspberries

    11/2 cups caster sugar

    11/2 cups water

    4cm ginger, julienned

    4 tbsp lime juice

    2 tsp finely grated lime rind

    1 tsp vanilla bean paste

    1 cup cream

    1 cup greek-style yogurt

    2 tsp white sesame seeds, toasted


  • Place watermelon, lychees and raspberries in a large bowl.

    Combine sugar and water in a microwave-safe bowl; microwave on high for 3 mins or until sugar dissolves and syrup is hot. Remove the bowl from the microwave and add lime juice, lime rind, vanilla paste and ginger to it. Cool mixture over a bowl of ice.

    Pour it over the fruit mixture.

    Beat cream and yogurt together with an electric mixer until soft peaks form. Serve fruit salad with yogurt cream, garnished with sesame seeds.
