Wholemeal caramel date muffins
1 cup chopped pitted dates
1 cup hot water
1 tsp bicarbonate of soda
395g canned condensed milk
1/4 cup vegetable oil
1 egg, lightly beaten
1 . cup plain wholemeal flour
1 tsp ground cinnamon
1/2 cup roughly chopped walnuts, toasted
Icing sugar, to serve
Preheat oven to moderate, 180°C.
Lightly grease a 12-cup muffin pan.
In a large bowl, combine dates, water and soda.
Stir in combined milk, oil and egg.
Sift flour and cinnamon together (returning husks) and fold into date mixture until just combined.
Spoon into recesses until ⅔ full.
Sprinkle nuts over.
Bake for 15-20 minutes, until cooked through.
Cool muffins in pan for 5 minutes before turning onto a wire rack to cool completely.
Dust with icing sugar before serving warm or cold.
Store in an airtight container.
